i'm over here

Hi all! I know I haven't updated in SO long, swore I did! 
Anyways, to let you all know, I am no longer blogging here. I have 
moved to tumblr! And I really love the setup I have going on! Way more people and 
a lot more interest in the vegan lifestyle!

Hi all! I made such a yummy salad for dins. Not completely raw, but hey, I'm trying here. Plus, lentils are my true loves, I couldn't say no (nor can I ever). With the salad I had some butternut squash.. so yummy! I love squash, any kind, it doesn't matter, it always makes me feel so warm and nice inside.
 Spicy Lentil Salad
  • 1/2 cup Lentils (I used canned - I know, I'm bad!)
  • Cumin (to taste)
  • Pepper (to taste)
  • Garlic (to taste)
  • 1/4 chopped white onion
  • 1 chopped tomatoe
  • 1/4 cucumber chopped
  • Mixed greens (as much as you like)
Mix all ingredients together, and pair with butternut squash! I cut a squash in half, then halved those pieces. I then placed a piece on a plate, flesh down and then microwaved it for 10 mins.. yes, I'm lazy today. Anyways, it was a great and flavourfull meal! Filled me right up! gosh I love being vegan :)

Mom's Fav

Macaroons are timeless, and oh so chocolaty. Traditionally, many recipes call for rolled oats, not coconut! Crazy hey? A raw, healthy version must be available right? One that you don't feel guilty indulging in? Well I have the answer.. YES it exists! Much like an old recipe my grandma use to make for my mom when she was a young girl, these macaroons will blow you away. They take maybe 5 minutes to prepare, and only take 6 ingredients.. how easy! Mom approved as well, she l♥ves them and tells me "they're just like the ones grandma use to make."

Raw Macaroons
  • Cacao powder (to taste, meaning lots!)
  • 2 tbsp coconut oil (melted)
  • pure maple syrup
  • shredded coconut flakes
  • 1 tsp vanilla extract
  • sprinkle of salt
Mix all ingrediants in a bowl. I don't measure my ingrediants, and honestly, you dont need a lot of coconut oil and syrup, the syrup does help hold things together though. Use common sense, if the mixture is to moist, add more coconut flakes, if its to dry, add a bit more syrup. It's fail proof. Once mixed, it should be moist and delicious! add more ingredients to your liking. With mine, I use a lot of cacao powder, and I mean lots, I make these bad boys chocolaty!

Here is a great and intriguing article on Carnism. I have recently been reading up on this interesting topic, and find it quite amazingly sensible.
Carnism is defined as "the belief system in which it's considered ethical and appropriate to eat (certain) animals."

It's a great read, and is written by Melanie Joy, author of the book 'Why We Love Dogs, Eat Pigs, and Wear Cows: An Introduction to Carnism'
